The Japanese Pantry

Japanese cooking is built on a pantry, and this book unlocks it. Emiko Davies — author of the acclaimed Gohan — returns with a focused guide to the essential Japanese storecupboard ingredients: miso, soy, mirin, sake, dashi, togarashi, nori, sesame and more. Each ingredient gets proper context — what it is, how it works, what to do with it — and recipes that actually use it well.

For anyone who's ever bought a bottle of mirin and not known what to do with the rest of it. Approachable, informative and genuinely useful for everyday cooking.
